Freezing Fish

If you have fish that you are going to consume at a later date, I recommend freezing the fish in water. You can use containers such as zip-loc bags or milk cartons ensuring that the fish pieces are completely covered by water.

Removing the Zipper

When you skin the fillet, you will see a dark purplish coloured blood vein along the lateral line. Because of its appearance, it is often called a “zipper”. This should be removed to provide a sweeter tasting fish. The pictures below show the steps from skinning to a clean fillet.
